The Healing Art of Good Food


Who said food wasn't a healing art? 

Well, preparing and eating healthy and delicious food is a wonderful way to get your creative juices flowing and connect the mind, body, and soul. From seeing the colors...connecting your hands to the foods...intaking the tasty flavors...and the smelling the aromas..your sense are all being stimulated and you now have a way to express yourself by designing your food.

The other day, I had the pleasure of inviting a wonderful mentor of mine over for dinner. Her name is Jill Schneider. She has been such an inspiration to me since moving to South Florida almost 4 years ago. Jill is a Holistic Life Coach, a Cancer survivor, and the director of Circle of Life Retreats in Delray Beach, FL. She heals herself naturally of Stage 5 Cervical Cancer back in the 70s and has been helping others do the same through lifestyle changes and juice fasting. She, my king- Rob, and I enjoyed the raw vegan healing foods that I prepared. We  had elevating conversations from healing arts, juice fasting, music, business ideas, travel experiences, youth activism. Raw vegan simply means that there is no dairy, eggs, or heat. Using no heat above 104 degrees or so preserves all the enzymes in the food so that more nutrients are absorbed into the body.



But on to the good stuff.... I got requests for recipes, so here goes..

ELECTRIC ITAL TACOS


For the "shell "  use:
  • Romaine Lettuce Leaves

For the "Meat":
  • Half soaked a drained Walnuts 
  • Half Baby Bella Mushrooms 
  • Salt, pepper, garlic powder, paprika, cumin (to your liking)

Chop the following for the toppings/ Filling:
  • mixed greens
  • cilantro
  • tomatoes 
  • green onions or you favorite ones
  • red, yellow, & orange peppers 
  • avocado


For desert.....

Vegan Strawberry Cheezcake



For the Crust: 

Blend the following in a food processor until in a crumbly and sticky texture.
  • 1 Cup of soaked & drained Raw Walnuts (at least 4 hours) 
  • 1 Cup of soaked & drained Raw Cashews (at least 4 hours) 
  • 1 1/4 Cup of unpitted Medjool Dates 
  • a pinch of sea salt
Flatten the mixture into a glass baking dish and set aside in the refridgerator. 

For the "Cheese: Filling: 

2 cups of soaked & drained Raw Cashews  until you see a highly crumbled mixture

Add 2 tbs of water.

Add 2 tbs of lime juice (adjust to yor liking).

Add 1/3 cup of raw agave. 

Add 1 Cup of Cold Pressed/ Virgin Unrefined Coconut Oil 

Blend all the ingredients together in the food processor until smooth. 

Add the smooth mixture and smooth it out on top of the crust. 

For the topping: 

Blend 2 cups of strawberry and 3 tbs of agave together in a blender until smooth.  (Be careful not to overblend into a soup like texture). 

Pour the strawberry galze over the "cheese" filling and spread evenly. 

Extras: 

Slice and add fresh strawberries, blueberries, and/or your favorite fruit on top of the cake.

Refridgerate for 4 hours or sit in the freezer for 1-2 hours. Do not freeze it though. 

NOTE: You can substitute pecans and/or brazil nuts for the crust.
